Quick & Delicious Pumpkin Walnut Muffins

Ingredients
- 2 cups all-purpose flour
- ½ cup sugar
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 ½ tsp ground cinnamon
- 1 cup canned pumpkin
- 2 large eggs
- ½ cup applesauce
- ¼ cup canola oil
- ½ cup water
- ½ cup chopped walnuts
- ¼ cup raisins
Instructions
- Preheat oven to 350 degrees. Spray a muffin pan with non-stick cooking spray. Stir together
the flour, sugar, baking soda, baking powder, salt, cinnamon, walnuts, raisins.
In another bowl, mix the pumpkin, eggs, applesauce, oil, water. Add pumpkin
mixture to the flour mixture and quickly stir until mixed. Don’t over mix, or
you will have pumpkin rocks. Bake for 25-30 minutes or until a toothpick comes
out clean. Let muffins cool for a few minutes, then remove from pan.
